In the Banderas revival it sort of made sense since Banderas couldn't lose his own natural accent.

But it was the same with Raul Julia's natural accent, and they didn't do Italian accents in the original production. And of course neither Banderas nor Julia were doing an Italian accent anyway. Or at least Julia wasn't. The "Italian" accent work for the Banderas revival sounded awful and just got in the way.

Do we have the recent Sweeney Todd and Cabaret to thank for this hyper-mess?

No, I think it's been going on for some time. A few years ago, just pre-pandemic, I think, we had assigned the "Grand Old Ivy" scene from How To Succeed for two guys in one of my college musical theatre classes. And at our first run of the music, I remember one of them asking "how do we do this number without the football game?" referring to the added dance sequence in the most recent revival. I think I referred him back to the script, where he somehow hadn't noticed that there is no such dance number as written. But of course he was only familiar with the revival. (Similarly, I remember how overly busy I thought "Brotherhood Of Man" was in that production, with everyone dancing from the very beginning, instead of a natural build as the characters get caught up in Finch's scheme GRADUALLY. No nuance at all, but plenty for the eye to have to see...)
