To present the opposite opinion - I think one reason why I've always liked live theatre a little more than film is because things do change from night to night - perhaps small changes but even so - and of course from person to person as casts change, or understudies go on, etc. It's also, for me, why doing a substantial run of a show can be exciting rather than boring. (There's always that question, "how do you keep things fresh from performance to performance," and I tend to think that in some ways, it's always fresh, because it's in the moment.)

And in terms of seeing different productions of the same piece, it's always interesting to me to see how different directors/designers/actors will approach a play or musical. Knowing the plot already in some ways helps, because you're more aware of the journey each actor is on. And of course I've seen my share of shows that I feel missed the mark in some way or another, compared to the original or to other productions I've seen - but there's always something interesting to take away from the experience.
