I've seen a few but the one that made the strongest impression on me is Sara Kestelman in the original Sam Mendes production at the Donmar. I only saw the televised version but her world-weary demeanour and raspy voice spoke of a lifetime of challenges and disappointments that hadn't yet defeated her. Her singing- which I'd define as a braying, keening croak- suited the material to a T- she sounds remarkably like Marianne Faithful- and she's the only one for me who conjured the sui generisness of the Lenya original. It's on YouTube for all to see. (Speaking of sui generis, Jane Horrocks' Sally is wildly unique. Too much for many, I'd guess, but pretty interesting. I'm sorry there seems to be no record of her Young Vic Annie Oakley opposite Julian Ovenden in Richard Jones' modern dress production.)
