In theory your post sounds reasonable but that actually is what happens, to a certain extent, in many situations: it’s why you could easily and much more cheaply get tickets during Daniel Radcliffe’s announced absences from Merrily, or when Hugh Jackman was out of Music Man, or when Lea Michele wasn’t in Funny Girl. It’s why the once a week performances of Donna Murphy in Hello Dolly were set at virtually an entirely separate price scale than the rest of the week that Bette Midler did.

In practice however, aside from star vehicles, with many performers legitimately calling in sick only an hour or two before showtime (or occasionally taking ill mid-show), with a variety of levels of fame for each person in the cast, and with a huge range of expectations among the audience (from people who’ve come to see that 6th-billed character actor they know and love to some tourists who haven’t heard of anyone in the cast), I think you’d understand right away why that kind of policy isn’t possible let alone practical.
