I have some friends in the cast and have seen both versions many times. Here is a spoilery response to your question:

1) The largest excision is that in the new version, there are almost no flashbacks to events in the first seven books. So, no Hagrid, no Uncle Vernon, no memories acted out.

2) Otherwise, nearly all major moments of stage magic are intact.

3) The scenes have been cut somewhat -- a line here, a line there. But mostly, the actors have been instructed to just, well, speed up the scenes.

4) Overall, the show still works, but some of the emotional heft is lost and some moments fly by too quickly to catch in the moment itself.
