While Merman I believe did miss a few over the years (I think she got sick during "Gypsy") and Channing towards the end of her career finally missed one (1), Merman had how high her high notes of her vocal range would be written into her contracts, and of course, shows were written for her. Channing wasn't known for beautiful singing and voice teachers looking for bel canto probably cringed at what sometimes came out of her mouth, but she nevertheless delivered a great acting performance while getting the notes out in character. Also, while they came from the pre-amplification era, orchestrations were really more singer-friendly; a lot of fortissimo brass, for instance, might be used at times during number when singers weren't singing -- at intros, during musical restatements without the singer singing, etc. Even though these particular singers belted (especially Ethel), the writing itself wasn't calling for crazy belting like what I witnessed last night at "Lempicka". Eden Espinosa was very good, but her voice sounded somewhat tired. I'm not surprised, given the very ungraceful vocal writing which in a way actually punishes the voice.
